The Chapter One team, headed by chef-proprietor Ross Lewis, is experienced, diverse, professional and talented.   Wholly dedicated to excellence in both food and service, their goal, always, is to ensure each guest’s experience of dining here is perfect, and fully embodies the Irish reputation for warm, relaxed hospitality.

Head chef Eric Matthews looks after the kitchen staff, whilst out front, the man in charge is General Manager Danny Desmond.  But no matter where they work, all our staff are committed to maintaining the high standards people have to come expect at Chapter One.
