Our sommelier Ed Jolliffe has carefully selected wines from around the world to compliment the menus designed by Head Chef Ross Lewis. These include rare and exclusive vintages, awe-inspiring clarets and superb Champagnes and sparkling wines.
Ed’s skills also shine through in the wines chosen to match the many individual courses in Chapter One’s tasting menus, which are available to diners at both lunch and dinner sittings.
We’ve gone all Irish with our spirits list here at Chapter One. And the reason? Because the current variety and quality of Irish spirits is outstanding, and when something is that good – that promising and exciting – it should be properly celebrated.
And we’re not just talking about the whiskeys for which Ireland has long been justly famous. Our gins and vodkas are sourced from exciting new producers all over the country, and our excellent bar staff know just how to make the best of them – from the classic G&T to a knock-your-socks-off cocktail.
And of course, we do the best Irish coffee in town – your very own piece of post-dinner theatre, right at your table.
